Walk past our grow room in Cheltenham on any given day and you'll see trays of tiny, vividly coloured greens at every stage of growth. A Genuine Health Boost, in a Small Package
Don't let their size fool you, microgreens are harvested at a nutritionally dense stage, just after the first true leaves appear. Research has found that, gram for gram, many microgreen varieties contain meaningfully higher concentrations of vitamins and antioxidants than their fully grown counterparts. Different varieties bring different strengths to the table too: peppery radish and mustard greens are known for their vitamin C content, deep red amaranth and sorrel bring a boost of colour-linked antioxidants, and broccoli microgreens are particularly well known among the health-food world for their concentration of beneficial plant compounds. Adding a small daily handful is a simple way to bring more nutritional variety into your diet without changing your whole routine.
A Feast for the Eyes
Chefs didn't start using microgreens in the 1980s just for their nutrition, it was the visual impact that first caught attention, and it's just as true today. A scattering of jewel-toned red garnet amaranth, the crinkled deep purple of red-veined sorrel, or the delicate curls of pea tendrils can turn an ordinary plate into something that looks genuinely considered. For home cooks, that same effect works just as well on a simple weeknight dinner, microgreens have a way of making a plate feel finished.
